CUT FRUITS AND VEGETABLES FREEZING AND PACKING IN POUCHES
Freezing is the most popular method of preserving fruits /vegetables for extended time periods.
It retards the growth of microorganism that causes food spoilage.
Quick frozen fresh cut fruits /vegetables is a high value product where fresh cut fruits/vegetables are cut into standard sizes as per customer needs and frozen to minus 18 deg c using an IQF equipment after precooling /treatment.
Based on the steps or operations involved, three lines may be set a) Line that requires a special equipment or operation such as for green peas with podder or line for pomegranates arils extractions b) Lines for root vegetables like carrot, potato or beetroot with Peelers c) Lines for the fruits and vegetables.
Cut fruits /vegetables are frozen in a fluid bed freezer. The capacities are based on green peas. For other products it will depend on heat load size of product and characteristics of the product. Peas and corns will be 100%. Cauliflower/Broccoli will be 60%. Cut beans or carrots will be 85/90% and cut fruits like mango cubes /papaya cubes will be 50%.
Key steps of operations in a fresh cut fruits/vegetables line will include blanching, cooling and dewatering before freezing in IQF equipment. Packing can be done in 5kg or 10kg export cartoons or in 340 grams pouches of breathable films. Thus frozen cut fruits /vegetables are stored at minus 22 degrees c.
